Yield: 6 servings 1 c Parmesan cheese, grated ½ c skim milk 6 fish fillets of choice ¼ c olive oil paprika and black pepper
Mix together the first 5 ingredients. Dip fish in milk, dredge in flour mixture. Put fish in greased 9x13-inch baking dish. Sauté garlic in olive oil for 2-3 minutes; drizzle over fish; sprinkle with paprika and pepper; bake at 350 degrees. The cooking time will vary depending on the type of fish you choose and the thickness of the meat. Thinner fish such as tilapia will take no more than 15-20 minutes, salmon and catfish can take up to 40 minutes. Serve with rice pilaf and a fresh salad. |
